These three dinners were developed for the oven and they work well that way. But in an air fryer, the same ingredients come out with deeper caramelization and crispier edges in roughly half the time. The reason is structural: an air fryer circulates hot air directly around every exposed surface simultaneously, rather than heating from below through a flat tray. The result is more even browning, better texture on the proteins, and a noticeably different eating experience from the oven version of the same dish.
Each recipe here delivers at least 21g of protein per serving from tempeh, tofu, and chickpeas. These are not light vegetable sides — they are complete dinners that happen to be made in an air fryer.
The One Rule That Applies to All Three Recipes
Do not crowd the basket. A single overfilled air fryer basket steams its contents rather than crisping them, because the moisture from the food has nowhere to escape. If you are cooking more than one serving or if the ingredients fill more than two-thirds of the basket, cook in two batches. The first batch will be done by the time you need it, and the total time is still shorter than roasting everything in the oven at once.
Air Fryer Buckwheat Tempeh Roast

Ingredients
- 1 cup buckwheat groats
- 2 cups tempeh, sliced into thick pieces
- 2 cups carrots, sliced into thick pieces
- 2 cups pumpkin or butternut squash, sliced
- 2 cups kale
- 2 cups tomatoes, chopped
- 1 large yellow zucchini, sliced
- 1 large onion, thinly sliced
- 1 tablespoon taco or creole seasoning
- 1 tablespoon olive oil
- Salt, to taste
Instructions
- Start the buckwheat groats on the stovetop: combine with 2 cups water, bring to a boil, reduce heat, and simmer for 15–20 minutes until tender. This runs while the air fryer does its work.
- Slice the tempeh, carrots, zucchini, and pumpkin into thick, even pieces. Thinly slice the onion.
- Toss the tempeh, carrots, pumpkin, and onion with olive oil, salt, and taco seasoning.
- Preheat the air fryer to 380°F (193°C).
- Arrange the tempeh, carrots, pumpkin, and onion in a single layer in the basket. Work in two batches if needed.
- Air fry for 10–12 minutes, shaking the basket halfway through, until golden and beginning to crisp at the edges.
- Add the kale, tomatoes, and zucchini to the basket for the final 3–4 minutes, until the kale is just crisped.
- Serve over the cooked buckwheat groats.

35g of protein per serving makes this the highest-protein recipe in this article — and the majority of that comes from tempeh alone. If you have never cooked tempeh before, the key step is step 6: getting the tempeh properly golden in the air fryer is what removes the slight bitterness it has raw and develops the dense, satisfying texture that makes it a credible protein centerpiece. Air Fryer Roasted Veggies with Tofu Cheese

Ingredients
- 1 block (8 oz) firm tofu, cut into wedges
- 2 green zucchini, cut into wedges
- 1 large eggplant, cut into wedges
- 2 cups broccoli florets
- 1 small can lentils, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon mild or hot curry powder
- 1 cup roasted chickpeas, to serve on top
Instructions
- Cut the tofu, eggplant, and zucchini into similarly sized wedges for even cooking.
- Drain the lentils and combine them in a bowl with the tofu and vegetables.
- Toss everything with olive oil, chili powder, curry powder, salt, and turmeric.
- Preheat the air fryer to 375°F (190°C).
- Arrange the tofu, eggplant, and zucchini in a single layer in the basket. Air fry for 10 minutes.
- Add the broccoli and lentils to the basket and air fry for a further 5–6 minutes, shaking once, until the vegetables and tofu are golden brown at the edges.
- Plate and top with roasted chickpeas.
| Tested note:
Turmeric stains the air fryer basket more than other spices — it leaves a yellow tint that is cosmetically annoying but culinarily harmless. A quick wash with a baking soda paste immediately after cooking prevents it from becoming permanent. The turmeric and chili powder combination in this recipe is anti-inflammatory by design: turmeric’s curcumin content works best when paired with black pepper, so add a few grinds of black pepper to the seasoning mix if you want to maximize the anti-inflammatory benefit. |

- Add the carrots, broccoli, and bell pepper. Continue air frying for another 7–8 minutes, shaking halfway through, until everything is tender and caramelized at the edges.
- Build the bowls: start with raw zucchini ribbons at the base, layer the roasted ingredients on top.
- Finish with spreadable nut cheese and serve.
| Tested note:
Sweet potato takes longer to cook through than most other vegetables in this bowl — cutting it into smaller cubes than the other ingredients is the technique that makes everything finish at the same time. If your sweet potato cubes are the same size as the broccoli florets, the broccoli will be overcooked by the time the sweet potato is done. Cut the sweet potato 20–25% smaller than everything else and you’ll get a consistent result. |
Air Fryer Tips for Plant-Based Cooking
- Preheat the basket for 3 minutes before adding food — a cold basket steams rather than crisps.
- Shake or flip ingredients halfway through every recipe, not just when the recipe suggests it.
- Season just before cooking rather than ahead of time — premature salt draws moisture from the vegetables and works against crispiness.
- Tamari, not soy sauce, keeps all three of these recipes genuinely gluten-free. Most soy sauce contains wheat.
