Ingredients
- 1 large corn tortilla or certified gluten-free wrap
- 3 tablespoons hummus
- 1/4 cup cucumber, sliced
- 1/4 cup shredded carrots
- 1/4 cup cherry tomatoes, halved
- Handful of mixed greens or baby spinach
- Salt and pepper, to taste
Instructions
- Lay the corn tortilla flat. Spread hummus evenly across the center.
- Layer the cucumber, carrots, cherry tomatoes, and greens down the middle.
- Season with salt and pepper.
- Fold in the sides, then roll tightly from the bottom.
- Slice in half or wrap tightly in foil for packing.
- For meal prep: make 3–4 wraps at once and store wrapped tightly in the fridge. Best eaten within 2 days.
| Tested note:
Corn tortillas are naturally gluten-free and hold up better than most GF wraps for a packed lunch — they don’t get soggy as quickly as flour substitutes, and they’re widely available and inexpensive. Look for ones made with just corn, water, and lime (calcium hydroxide) for the cleanest ingredient list. |

Ingredients
- 1/2 can (15 oz) green or brown lentils, drained and rinsed
- 1/2 can (15 oz) kidney or white beans, drained and rinsed
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
- Combine the lentils, beans, cucumber, cherry tomatoes, and red onion in a large bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Stir in the fresh parsley.
- Divide into meal prep containers. Refrigerate for up to 3 days.
- Add a handful of fresh greens just before eating if desired.
| Tested note:
This salad actually improves over the first 24 hours in the fridge — the beans absorb the lemon-olive oil dressing and the flavors deepen. Make it Sunday night, and Monday and Tuesday lunches are better than freshly made. |
