Soups are the most efficient format for delivering high quantities of prebiotic fiber in a single meal. The extended simmering process breaks down cell walls, making the fiber compounds in legumes and vegetables more accessible to the gut bacteria that ferment them. Fava beans specifically feed Bifidobacterium and Lactobacillus — the two genera most consistently associated with gut health in clinical research. Teff’s resistant starch content is unusually high for a grain. Resistant starch is the fiber type that has the most direct and well-documented prebiotic effect: it reaches the large intestine largely intact, where it is fermented by gut bacteria into short-chain fatty acids (SCFAs), particularly butyrate. Butyrate is the primary energy source for the colonocytes (colon cells) that line the gut — it directly supports gut lining integrity and reduces intestinal permeability. The Microbiome Science Behind These Soups
