Ingredients
- 2 cups almond or cashew milk, unsweetened
- 1/2 cup rolled oats
- 1 teaspoon chia seeds
- 1 ripe banana, sliced
- 1/4 cup blueberries (fresh or frozen)
- 1 tablespoon almond butter
- 1/4 teaspoon cinnamon
- Pinch of turmeric (optional, for anti-inflammatory boost)
- Pinch of salt
- Optional toppings: hemp seeds, maple syrup, extra fruit
Instructions
- In a small saucepan, bring the almond or cashew milk and a pinch of salt to a gentle simmer over medium heat.
- Stir in the rolled oats and chia seeds. Reduce heat to low.
- Cook for 8–10 minutes, stirring occasionally, until the oats have absorbed most of the milk and reached a creamy consistency.
- Remove from heat. Stir in the cinnamon and turmeric if using.
- Divide between two bowls. Top with sliced banana, blueberries, and almond butter.
- Add optional toppings and serve immediately.
