Avocado and Beans Wrap

Prep Time 10 mins Cook Time 2 mins 2-3 servings

Ingredients:

  • 1 medium avocado, 
  • 1- inch piece ginger, grated
  • 2  garlic cloves, minced
  • Juice of ½ lemon
  • 1 cup cabbage, shredded
  • 1 medium carrot, julienned
  • 1 small zucchini, julienned
  • 4-6 rice paper wraps or small wholewheat tortillas
  • 2 teaspoons olive oil

For Spicy Almond Sauce:

  • 1 teaspoon almond butter
  • 1 teaspoon low-sodium soy sauce
  • ¼ teaspoon teaspoon rice vinegar
  • 1⁄2 teaspoon lemon juice
  • 1 cup adzuki or red beans
  • 1⁄2 teaspoon chili garlic paste
  • 2 dates, finely chopped
  • 1⁄2 teaspoon sesame oil

Directions:

  1. Peel the avocado, remove the pit, and slice it. Drain and rinse the beans.
  2.  In a small bowl, gently toss together the sliced avocado, ginger, garlic, lemon juice, cabbage, carrot, zucchini, and drained beans.
  3. Put one wrap on a flat surface. Place about 1⁄2 of the avocado mixture in the center of the wrap.
  4. Fold the wrap about 1⁄2 inch inward on two parallel sides and roll the wrap up until the mixture is covered.
  5. Repeat with the remaining wraps.
  6. Heat oil in a skillet over medium-high heat.
  7. Add the spring rolls to the skillet and brown them for about 30 seconds on each side.
  8. Mix the sauce ingredients in a small bowl and stir thoroughly. Add one tablespoon of warm water, if necessary, for desired consistency.
  9. Serve the spring rolls warm with the spicy almond sauce as a dip and enjoy!

Red Bell Pepper Spinach Casserole

Prep Time 10 mins Cook Time 20 mins 2-3 servings

Ingredients:

  • 2 cups vegetable stock
  • 1 cup of quinoa, uncooked
  • 1 cup carrots, diced
  • ¼ teaspoon salt
  • 1 tablespoon pesto sauce
  • 1 teaspoon oat flour
  • 5-oz vegan mozzarella cheese, shredded
  • 2 cups fresh organic spinach
  • 1 can black beans
  • 1 tablespoon vegan parmesan cheese
  • 1 green onion chopped
  • 2 medium red bell peppers, diced

Directions:

  1. Preheat the oven to 400℉.
  2. Add quinoa and green onions to a rectangular baking dish.
  3. Add carrots, bell pepper, and spinach to a steamer bowl. Steam on high for 3-5 minutes.
  4. In a medium mixing bowl, add the pesto, vegetable stock, oat flour, and salt. Use a wire whisk to combine. 
  5. Heat this mixture in the microwave or on the stovetop until it starts to boil. 
  6. Add the vegetable stock and spinach to the quinoa. Add 3/4 of the mozzarella cheese and all the parmesan. 
  7. Bake the mixture for 10 to 15 minutes. 
  8. Sprinkle the remaining cheese on top. Place the casserole back in the oven for another 5 minutes.

Tomato Tofu Cauliflower rice

Prep Time 15 mins Cook Time 10 mins 2-3 servings

Ingredients:

  • 1 medium head of cauliflower
  • Salt and pepper to taste
  • Dried parsley for garnish
  • 5-6 cherry tomatoes, diced
  • 1 cup bell peppers, diced
  • 1 teaspoon garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon marjoram/sage
  • 1 dried basil
  • 1 dried oregano
  • 2 teaspoons olive oil
  • 1 cup grated tofu

Directions:

  1. Cut the cauliflower into florets and place in the food processor.
  2. Pulse until it has a coarse consistency like rice. Set aside.
  3. In a skillet, heat the oil and sauté the garlic and onion for three minutes. 
  4. Add the rest of the ingredients. Cook for 6 to 8 minutes.
  5. Add the cauliflower rice and toast for 2-3 minutes and serve.
