Ingredients
- 1/2 cup dry quinoa
- 1 cup vegetable broth
- 1/2 cup corn kernels (frozen or canned)
- 1/2 can (15 oz) black beans, drained and rinsed
- 1/2 cup salsa
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt, to taste
- Optional: avocado, lime juice, cilantro, vegan cheese
Instructions
- Rinse the quinoa under cold water.
- Combine the quinoa and vegetable broth in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 12–15 minutes until all the broth is absorbed.
- Stir in the corn, black beans, salsa, cumin, and chili powder.
- Heat over low for 2–3 minutes until everything is warmed through. Season with salt.
- Serve with optional toppings.
| Tested note:
Quinoa has a natural coating called saponin that can taste slightly bitter — rinsing it under cold water for 30 seconds before cooking removes this and makes a noticeable difference in the flavor of the finished dish. This is the one step that most people skip and most people then blame on quinoa rather than the unrinsed saponin. Do not skip it. |
Triple Bean Soup

Ingredients
- 1/2 can each: black beans, kidney beans, and chickpeas — all drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Fresh cilantro or parsley, to serve
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook for 4–5 minutes until softened.
- Stir in the cumin, paprika, and chili powder. Cook for 1 minute until fragrant.
- Add all three types of beans, the diced tomatoes, and the vegetable broth.
- Bring to a boil, then reduce heat to low. Simmer for 20–25 minutes until the soup thickens.
- Season with salt and pepper. Serve topped with fresh cilantro or parsley.
| Tested note:
Using three different bean types — black, kidney, and chickpeas — is not just for variety. Each bean variety has a slightly different texture and flavor profile, which means the soup has more dimension than a single-bean version of the same recipe. The chickpeas retain their shape and provide a slightly firm bite; the kidney beans soften more and add body; the black beans break down slightly at the edges and thicken the broth. $1.10 per serving from three canned beans is genuinely one of the most cost-effective complete meals in this cookbook. |
