- Cut a zucchini into pieces. Place the pieces in the steamer basket. Steam for 3 minutes.
- Meanwhile, make noodles out of the other zucchini using a spiralizer or mandoline slicer.
- Place the steamed zucchini in the blender. Also, blend in the basil, tahini, garlic, and salt until smooth.
- Place the zucchini noodles in a bowl. Pour pesto over the noodles.
- Mix well and serve garnished with cherry tomatoes and vegan cheese if using.
Grilled Veggies with Hummus

Prep Time 10 mins Cook Time 6-15 mins 2-3 servings
Ingredients:
- 1 medium red bell pepper, wedges
- 1 medium green bell pepper, wedges
- 1 medium yellow bell pepper, wedges
- 2 medium carrots, wedges
- 1 green zucchini, rounds
- 1 yellow zucchini, rounds
- 2 tablespoons ground flax seeds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 tablespoon seasoning of choice
Directions:
- Preheat the oven to 400°F or heat the grill pan for 10 minutes on the stovetop.
- Slice the vegetables into wedges and rounds.
- In a large bowl, mix all the ingredients and coat the pieces well.
- Add to the baking tray or grill pan, and drizzle the remaining oil-spice mix.
- Grill for 3 to 6 minutes, depending on the vegetables.
- Alternatively, bake for 15 minutes or until golden brown.
- Serve with cooked or canned beans
Triple Bean Soup

Ingredients:
- 1 (8-oz) can black beans
- 1⁄2 (4-oz) can red kidney beans
- 1⁄2 can of lima beans
- 1 tsp cayenne
- 1 tsp salt
- 4 cups water
Directions:
- Chop the tomatoes and set aside.
- Heat oil in a saucepan or soup pot.
- Sauté the leek and tomatoes for five minutes on medium heat.
- Add salt, cayenne, and water to the saucepan or soup pot.
- Add the canned beans along with the liquid.
- Let the soup cook for the remaining 15 minutes.
- Cool and serve. If you prefer a creamy soup, blend it into a puree.
- Top with fresh herbs and seeds, if desired.
