These three dinners prove otherwise. Each one delivers 15–18 grams of fiber per serving while tasting like a proper meal you chose because you wanted it, not because you were trying to hit a number.

Eggplant Lentil Stew

Ingredients

  • 1 medium eggplant, cubed
  • 1 cup red or green lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • Fresh parsley, to serve

 

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3–4 minutes until softened.
  2. Add the eggplant and cook for 5 minutes, stirring occasionally, until it starts to soften.
  3. Stir in the cumin, paprika, and turmeric. Cook for 1 minute until the spices are fragrant.
  4. Add the lentils, diced tomatoes, and vegetable broth. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until the lentils are tender and the stew has thickened.
  6. Season with salt and pepper. Serve with fresh parsley.
Tested note:

The fiber number here — 17.7g per serving — comes almost entirely from the lentils and eggplant. Lentils have about 8g of fiber per half-cup cooked, and eggplant contributes another significant portion. The key to getting the stew to a genuinely thick consistency is patience on step 5: let it simmer uncovered for the last 5 minutes if it’s still too liquid.

Ingredients

  • 3 carrots, cut into wedges
  • 2 cups broccoli florets
  • 1 cup red bell pepper, cut into wedges
  • 2 sweet potatoes, cubed
  • 1 can (8 oz) chickpeas, drained and rinsed
  • 1 cup firm tofu, cubed
  • 2 teaspoons olive oil
  • 1 tablespoon soy sauce or tamari (use tamari for gluten-free)
  • 1 tablespoon hot or chili sauce
  • 1 zucchini, ribboned (kept raw)
  • 1/2 cup spreadable nut cheese, to top

 

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the tofu, chickpeas, and sweet potato cubes in a bowl with olive oil, soy sauce, and chili sauce.
  3. Arrange in a single layer on a baking tray and roast for 15–20 minutes, flipping halfway, until golden and tender.
  4. Add the carrots, broccoli, and bell pepper to the tray in the last 10 minutes.
  5. Build the bowls: place the raw zucchini ribbons at the base, then top with all the roasted ingredients.
  6. Finish with spreadable nut cheese and serve.
Tested note:

Using tamari instead of regular soy sauce keeps this recipe genuinely gluten-free — most soy sauce contains wheat, while tamari is made with minimal or no wheat depending on the brand. Check the label before buying.

Add hemp seeds (2 tablespoons) to either bowl for an extra 6g of protein per serving — they’re flavorless and blend in without changing the texture.
