Ingredients
- 3 carrots, wedges
- 2 cups broccoli florets
- 1 cup red bell pepper, wedges
- 2 sweet potatoes, cubed
- 1 can (8 oz) chickpeas, drained and rinsed
- 1 cup firm tofu, cubed
- 2 teaspoons olive oil
- 1 tablespoon tamari (certified gluten-free soy sauce)
- 1 tablespoon chili sauce
- 1 zucchini, ribboned (raw)
- 1/2 cup spreadable nut cheese, to serve
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the tofu, chickpeas, and sweet potato with olive oil, tamari, and chili sauce.
- Arrange on a baking tray and roast for 15–20 minutes, flipping halfway, until golden.
- Add the carrots, broccoli, and bell pepper for the final 10 minutes.
- Build bowls: start with raw zucchini ribbons, then layer all roasted ingredients on top.
- Finish with spreadable nut cheese.
| Tested note:
The critical gluten-free detail here is using tamari instead of soy sauce — standard soy sauce contains wheat. Tamari is brewed with little or no wheat and delivers the same salty, umami depth. Look for a label that specifically says ‘gluten-free tamari’ to be certain. |
Fava White Bean Soup Meal (Gluten-Free High-Protein Version)

Ingredients
- 1/2 cup dry cannellini beans (or 1 can, drained)
- 1 cup dry fava beans (or 1 can, drained)
- 1 teaspoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 medium tomatoes, chopped
- 1 medium sweet potato, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- If using dried beans, soak overnight. Drain before cooking.
- Heat olive oil in a saucepan over medium heat. Saute onions and garlic for 3 minutes.
- Add tomatoes and sweet potato. Cook for 5 minutes.
- Add the beans, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30–40 minutes (15–20 for canned beans) until tender.
- Season with salt and pepper and serve.
