Ingredients

- 1 cup broccoli florets, steamed

- 1/2 cup soy milk

- 2 cups spinach
- 1 tsp seasoning of choice
- Salt, to taste
- 2 tomatoes, sliced
- 2 onions, sliced
- 6 green or black olives, halved

Step 1
Prepare the Base: Steam the broccoli florets for 6–8 minutes until tender, then mash well. In a mixing bowl, combine the mashed broccoli, oat flour, almond flour, grated zucchini, salt, baking powder, vegan sugar (if using), apple cider vinegar, coconut oil, and soy milk. Mix until a dough forms, adding more flour if too wet or more soy milk if too dry. Roll the dough into two or three thin pizza crusts and bake at 375°F (190°C) for 10–12 minutes, or until golden and cooked through.

Prepare the Toppings: Blanch the spinach in boiling water for 2 minutes, then drain well. Blend or puree with the seasoning and salt until smooth.
Step 3
Assemble the Pizza: Spread the spinach puree evenly over the baked pizza crusts. Top with the sliced tomatoes, onions, and halved olives.
