Ingredients
- 1 cup cooked or leftover brown rice
- 1 tsp minced garlic
- 1 cup crumbled tofu
- 1 small onion, finely chopped
- 1 tbsp ground flax seeds
- 1 jalapeño, finely chopped
- 1 tsp salt
- 1 tsp cumin powder
- 1 tbsp chopped herbs
- Water, as needed for mixing
- 2–3 tbsp cooking oil
Instructions
Step 1
Crumble the tofu and mash the cooked brown rice with a potato masher. Finely chop the onion and jalapeño.
Step 2
In a large bowl, combine the tofu, mashed rice, onion, jalapeño, garlic, ground flax seeds, salt, cumin powder, and chopped herbs. Add a little water at a time until the mixture forms a semi-thick dough.
Step 3
Shape the mixture into fritters about 1 inch thick.
Step 4
Heat the cooking oil in a nonstick skillet over medium heat. Cook the fritters for 3–4 minutes per side, or until golden brown.
Step 5
For a lighter option, air fry the fritters at 350°F for 5–6 minutes, flipping them halfway through cooking.
Step 6
Serve warm with your favorite sauce or dip. I created these tasty fritters after ending up with leftover rice from a dinner party.
