Ingredients
- 2 cups cooked millet
- 2 cups large broccoli florets
- 2 cups spinach
- 2 cups mushrooms
- 2 tbsp BBQ sauce
- 1 tbsp olive oil
- 1 tsp paprika
Instructions
Step 1
Cook ½ cup millet in 2 cups of water for 30–35 minutes, or until tender.

Preheat the oven to 400°F and lightly grease a baking tray.

Rinse the mushrooms and pat them dry.
Step 4
Toss the broccoli florets and mushrooms with olive oil, then arrange them on the prepared baking tray.
Step 5
Bake for 12–15 minutes, or until the vegetables are golden brown.
Step 6
Reduce the oven temperature to 350°F and transfer the roasted vegetables to a baking dish.
Step 7
Toss the vegetables with the cooked millet, spinach, paprika, and BBQ sauce.
Step 8
Return the dish to the oven and bake for another 5 minutes to heat everything through.
