Ingredients
- 1 cup red quinoa
- 2 cloves garlic, minced
- 1 large carrot, chopped

- 4 medium tomatoes, chopped

- 1 yellow zucchini, chopped
- 1 tsp paprika
- 1 cup corn kernels
- 1 tsp turmeric
- 1 cup broccoli, chopped

- 1 tsp olive oil

Step 1
Rinse the red quinoa thoroughly and set it aside. Chop the carrot, onion, tomatoes, zucchini, and broccoli into bite-sized pieces.

Heat the olive oil in a saucepan over medium heat. Sauté the chopped onion and minced garlic for about 3 minutes until fragrant.

Add the chopped tomatoes, zucchini, broccoli, corn kernels, and carrot. Cook for about 5 minutes, stirring occasionally.

Stir in the rinsed quinoa, water, salt, black pepper (or chili powder), paprika, turmeric, and cumin powder. Mix well to combine.
