Ingredients

  • 1 cup red quinoa
  • 2 cloves garlic, minced
  • 1 large carrot, chopped

  • 1 onion, chopped

  • 4 medium tomatoes, chopped
  • 1 tsp black pepper or chili powder
  • 1 yellow zucchini, chopped
  • 1 tsp paprika
  • 1 cup corn kernels
  • 1 tsp turmeric
  • 1 cup broccoli, chopped
  • ½ tsp cumin powder
  • 1 tsp olive oil

Instructions

Step 1

Rinse the red quinoa thoroughly and set it aside. Chop the carrot, onion, tomatoes, zucchini, and broccoli into bite-sized pieces.

Heat the olive oil in a saucepan over medium heat. Sauté the chopped onion and minced garlic for about 3 minutes until fragrant.

Add the chopped tomatoes, zucchini, broccoli, corn kernels, and carrot. Cook for about 5 minutes, stirring occasionally.

Stir in the rinsed quinoa, water, salt, black pepper (or chili powder), paprika, turmeric, and cumin powder. Mix well to combine.

Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the quinoa is tender and the liquid has been absorbed.

Step 6
