Ingredients
- 1/2 cup dry cannellini or white kidney beans
- 1 cup dry fava beans
- 1 tsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 medium tomatoes, chopped
- 1 medium sweet potato, chopped
- 4 cups water
- 1 tsp salt
- 1 tbsp Herbs de Provence
- 1 tsp lime juice
Instructions
Step 1
Rinse the cannellini (or white kidney) beans and fava beans, then set them aside. Chop the vegetables.
Step 2
Heat the olive oil in a saucepan over medium heat. Sauté the onion and garlic for about 3 minutes, or until softened.
Step 3
Add the chopped tomatoes and sweet potato. Cook for another 5 minutes, stirring occasionally.
Step 4
Stir in the beans, water, salt, and Herbs de Provence. Mix well.
Step 5
Cook for about 30 minutes, stirring occasionally. Add more water if needed to achieve your desired consistency.
Step 6
