Jamaican Green Lentil Pepper Soup

Ingredients

  • 1 onion, chopped
  • 1/2 cup lentils
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 sweet potato, diced
  • 4 cups vegetable broth
  • 1 tsp curry powder
  • 2 tsp allspice
  • 1/2 tsp ground black pepper
  • 1/2 tsp minced ginger
  • Salt, to taste
  • 1 tsp nut butter
  • 1/2 cup coconut milk (optional)

Instructions

Step 1

Chop the onion, carrots, and sweet potato. Mince the garlic and ginger.

Step 2

Heat the nut butter in a saucepan over medium heat.

Add the garlic, ginger, and onion. Sauté for 4 minutes.

Step 4

Stir in the salt, curry powder, allspice, and black pepper. Cook for 1 minute to release the spices’ aroma.

Add the chopped vegetables and cook for 5 minutes, stirring occasionally.

Step 6

Stir in the lentils and vegetable broth. Simmer for 20 minutes, or until the vegetables and lentils are tender.

Step 7

If using coconut milk, stir it in during the last 5 minutes of cooking.

Step 8

Let the soup cool slightly. Serve it as is or blend it for a creamy texture, depending on your preference.
