Ingredients

  • â…“ cup cashew butter
  • ¼ cup chopped nuts of choice
  • 2–3 tbsp pure maple syrup
  • ¼ cup dried blueberries
  • ¼ cup rolled oats
  • 2 tbsp seeds of choice
  • ¼ tsp salt
  • Freeze/Chill time (2–3 hours)

Instructions

Step 1

In a mixing bowl, combine the cashew butter, chopped nuts, maple syrup, dried blueberries, rolled oats, seeds, and salt.

Step 2

Mix well until it forms a dough.

Step 3

Press the mixture into a 4×4-inch pan lined with parchment paper, smoothing it down with a spatula.

Step 4

Chill in the refrigerator for 2–3 hours, or until firm.

Step 5

Remove from the refrigerator and cut into bars.

Step 6

Optional: Top with berry sauce, melted chocolate, seeds, or extra chopped nuts.

Step 7

Store in an airtight container in the refrigerator for up to one week. My gym friend got me interested in these nutrient-packed energy boosters.
