Ingredients
- 6-8 frozen mini tart shells
- 2 cups strawberries, divided
- ¼ cup coconut sugar
- 1 tsp lemon juice
- 1 tsp corn flour
- 1/8 tsp salt
- ¼ tsp cinnamon
Instructions
Step 1
Bake Tart Shells: Preheat the oven or air fryer to 350°F. Bake the frozen tart shells for 6-10 minutes, or until golden brown. Let them cool.
Step 2
Make Strawberry Compote: In a saucepan, mix half of the strawberries with corn flour, coconut sugar, cinnamon, salt, and lemon juice. Simmer on low heat for 6-8 minutes until the filling thickens and the sugar dissolves, stirring frequently to avoid sticking. Let the compote cool.
Step 3
Fill and Serve.
Step 4
Fill the cooled tart shells with the strawberry compote.
Step 5
Slice the remaining strawberries and place them on top of each tart before serving. My neighbor’s kid loves these tarts, and I make sure there is enough for him to take home.
