Ingredients
- 1 cup uncooked brown rice
- 3 cups water
- 1 red bell pepper, cubed
- 2 cups butternut squash, cubed
- ¼ cup soy sauce
- ½ tsp salt
- 1 cup chopped mushrooms
- 3–4 olives, sliced
- 2 tsp seed or nut butter, divided
- ½ cup tofu or canned beans of your choice
Instructions
Step 1
Melt 1 teaspoon of vegan butter in a saucepan over medium heat. Add 3 cups of water and bring it to a boil.
Step 2
Add the rinsed brown rice to the boiling water. Reduce the heat to medium and cook for about 35 minutes, stirring often. Add more water if needed to prevent sticking.
Step 3
Remove the rice from the heat before it becomes mushy and set it aside to cool slightly.
Step 4
While the rice cooks, cube the red bell pepper and butternut squash, then chop the mushrooms.
Step 5
In the same saucepan, heat the remaining vegan butter over high heat. Add the bell pepper, butternut squash, and mushrooms, then sauté for about 5 minutes.
Step 6
Add the tofu or canned beans for protein and cook for another few minutes until heated through.
Step 7
Serve the brown rice topped with the sautéed vegetables and protein. Pair with stew, curry, or your favorite side dishes. This is a wholesome, fiber-rich take on a classic comfort food favorite.
