Ingredients
- 1 small cauliflower head
- 2 tbsp olive oil
- 1/2 cup green chimichurri, divided
- For the Low-Fat Chimichurri:
- 1 cup parsley leaves, finely chopped
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 1 tbsp almond paste
- 2 tbsp water
Instructions
Step 1
Preheat the oven to 400°F.
Step 2
Cut the cauliflower into large florets or thick steaks.
Step 3
In a bowl, whisk together the parsley, garlic, lime juice, almond paste, and water to prepare the green chimichurri.
Step 4
In a large bowl, toss the cauliflower with the olive oil and half of the chimichurri.
Step 5
Coat the cauliflower evenly with the oil and chimichurri mixture.
Step 6
Arrange the cauliflower on a baking tray and bake for about 15 minutes, or until lightly browned and tender.
Step 7
Top the roasted cauliflower with the remaining chimichurri.
Step 8
Serve as a side dish, snack, or add it to salads. This is one of my bold, herbaceous favorites that always surprises guests.
