Ingredients
- 1 small head cauliflower, chopped into florets
- 1 cup frozen corn kernels
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp herbs de Provence
- 4 cups vegetable broth
- Salt and pepper, to taste
- 1 tbsp nut butter
Instructions
Step 1
Preheat the oven to 375°F and lightly grease a baking tray.

Cut the cauliflower into florets, chop the onion, and mince the garlic.

Toss the cauliflower florets and frozen corn with the nut butter until evenly coated. Spread them on the prepared baking tray and bake for 10 minutes.

In a large pot over medium heat, dry sauté the chopped onion and garlic for 4–5 minutes.

Add the vegetable broth, herbs de Provence, salt, and pepper. Simmer for 5 minutes.

Stir in the roasted cauliflower and corn. Cook for another 10 minutes.

Taste and adjust the seasoning with additional salt and pepper if needed. Let the soup cool slightly.
