Ingredients
- 1 cup baby spinach
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 1 cup Swiss chard, chopped
- 2 peaches, sliced into rounds
- 1/4 cup pear-seed butter (see recipe)
- 1/4 cup chopped walnuts
Instructions
Step 1
Preheat the oven to 375°F.

Rinse and slice the vegetables and peaches.
Step 3
Arrange the peach slices, bell pepper, and onion on a wire rack.

Roast for 8 minutes.

Alternatively, roast in an air fryer basket at 350°F for 5 minutes.

Arrange the baby spinach and Swiss chard on serving plates, then sprinkle with the chopped walnuts.

Top the greens with the roasted onion, bell pepper, and peach slices.
