Ingredients
- 3 cups baby spinach
- 1 cup arugula
- 1 cup microgreens of choice
- 2 tsp ground flax seeds
- 1/2 cup green dressing
- 1 cup alfalfa sprouts
- For the Dressing:
- 1/2 cup parsley or basil leaves
- 1/4 tsp garlic powder
- 1 tbsp lemon or lime juice
- 1/2 cup dill leaves
- 1/4 tsp salt
- Optional:
- 1 cup raw mango or avocado slices
Instructions
Step 1
Soak the greens in vinegar water for 5 minutes, then rinse thoroughly with fresh water.
Step 2
Pat the greens dry and arrange them on serving plates.
Step 3
Dry sauté the microgreens and alfalfa sprouts in a frying pan over low heat for 5 minutes. Remove from the pan and let them cool.
Step 4
While the microgreens cool, rinse the herbs.
Step 5
Combine all the dressing ingredients in a blender or food processor and blend until smooth and creamy.
Step 6
Toss the alfalfa sprouts and microgreens with the green dressing and ground flax seeds.
Step 7
Add the dressed sprouts and microgreens to the serving plates.
Step 8
Optionally, top with raw mango or avocado slices for extra flavor. Serve fresh. A combo of tender sprouts and fresh greens offers a crisp, refreshing taste while being incredibly nutritious.
