Ingredients
- 1 can beans
- 1 can green jackfruit
- 1 cup sun-dried tomatoes
- 1 medium orange or red bell pepper, grated
- 1 medium yellow bell pepper, grated
- 1 cup grated butternut squash
- 1 tsp olive oil
- 3 tbsp nut or seed butter
- 2 tsp taco or Tex-Mex seasoning
- 4 large taco shells or 8 tostadas
Instructions
Step 1
Slice the sun-dried tomatoes. Grate the bell peppers and butternut squash. Shred the green jackfruit using your hands or a fork.
Step 2
Soak the sun-dried tomatoes in warm water for 5 minutes, then drain well.
Step 3
Heat the olive oil in a frying pan over medium heat. Add the grated vegetables and shredded jackfruit. Sauté for about 8 minutes, stirring occasionally.

Stir in the taco seasoning, beans, and a pinch of salt. Cook for another 2 minutes.

Toast the taco shells or tostadas in a hot frying pan for 2–3 minutes until crisp on both sides.
