Japanese Shirataki Noodle Soup

Ingredients

  • 1 cup shirataki noodles
  • 1 cup fresh peas
  • 1 cup edamame
  • 1 tbsp hot or chili sauce
  • 2 cups red cabbage, shredded
  • 4 cups water
  • 1 cup mixed bell peppers, chopped
  • 1 tbsp miso paste
  • 1 tsp nut butter
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1/2 tsp salt

Instructions

Step 1

Shred the cabbage and soak the shirataki noodles in water for 10 minutes. Drain and set aside.

Step 2

Heat the oil in a saucepan over medium heat and sauté the minced garlic for 1 minute.

Step 3

Add the peas, edamame, bell peppers, shredded cabbage, salt, miso paste, and nut butter. Sauté for 5 minutes.

Step 4

Pour in 4 cups of water and bring to a simmer. Cook for 15 minutes.

Step 5

Add the soaked shirataki noodles and cook for another 2 minutes.

Step 6

Let the soup cool slightly, then serve topped with chopped green onions. My kids enjoy noodle time, any time. This soup doubles as a light dinner for them.
