Navy Bean Chili With Multigrain Bread

Ingredients

  • 1 onion, chopped
  • 4 medium tomatoes, chopped
  • 2 tsp olive oil
  • 1 tsp salt
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 cans white beans
  • 1 tsp dried thyme
  • 2 tsp white pepper
  • 3 cups water
  • 1 tsp cumin powder
  • 4 slices multigrain or soda bread

Instructions

Step 1

Chop the onion, tomatoes, and carrot. Peel and mince the garlic.

Step 2

Heat the olive oil in a pan over medium heat. Sauté the onion and garlic for about 3 minutes until softened.

Step 3

Add the diced carrot and white beans to the pan. Cook for 6–8 minutes, stirring occasionally.

Step 4

Stir in the dried thyme, white pepper, cumin powder, and salt. Cook until the mixture begins to thicken.

Step 5

Add the chopped tomatoes and stir continuously for about 2 minutes.

Step 6

Pour in the water, cover the pan, and let it simmer for 10 minutes.

Step 7

Serve hot with lemon wedges and toasted multigrain or soda bread. You can never go wrong with pairing a thick, protein-packed chili with wholesome bread for a filling meal. Tip: Add chili powder or hot sauce for extra heat if desired.
