Ingredients
- 1 cup bulgur
- 1 large eggplant
- 1 onion, chopped
- 2 cups okra, chopped
- 2 medium carrots, chopped
- 1 tsp olive oil
- 2 cloves garlic, minced
- 3 cups water
- 1 tsp salt
- 1 tbsp Old Bay or zaatar seasoning
- 2 blood oranges, sliced
- 2 cups spinach
Instructions
Step 1
Rinse the bulgur and set it aside. Chop the vegetables and slice the blood oranges.
Step 2
Heat the olive oil in a saucepan over medium heat. Sauté the onion and garlic for about 3 minutes.

Add the okra, eggplant, and carrots. Cook for about 5 minutes, stirring occasionally.
Step 4
Stir in the bulgur, water, salt, and your choice of Old Bay or zaatar seasoning.

Mix well and cook for about 20 minutes, or until the liquid is absorbed and the bulgur is tender.
Step 6
Top with spinach, blood orange slices, and seeds of your choice. Serve immediately. A bright, flavorful combo that never fails to please even the finicky eater.
