Ingredients
- 2 carrots, cut into wedges
- 2 beets, sliced
- 2 white onions, sliced
- 1 cup red bell pepper wedges
- 1 cup chopped breadsticks
- 1 (16 oz) small pumpkin, ribboned
- 2 tsp olive oil
- 1 cup lettuce, chopped
- 1 tbsp hot or chili sauce
Instructions
Step 1
Preheat the oven to 400°F.

Cut the carrots, red bell pepper, and pumpkin into wedges.

Peel the beets and onions. Slice the beets into thin rounds and the onions into rings.

Peel the pumpkin and create ribbons using a box grater or mandoline slicer.

In a large bowl, toss the pumpkin ribbons, beet slices, and onion rings with olive oil and chili sauce.

Spread the vegetables in a single layer on a baking tray. Bake for 15–18 minutes.

Flip the vegetables halfway through baking to ensure they roast evenly until tender and lightly browned.

Transfer the roasted vegetables to serving plates.
