Ingredients
- 1 avocado, peeled
- 1 cup spinach
- 2 medium sweet potatoes, peeled
- 2 cups cooked quinoa
- 2 cups tofu
- 1 tbsp olive oil
- 1 tbsp Creole or za’atar seasoning
Instructions
Step 1
Cook ½ cup of quinoa in 2 cups of water for about 15 minutes, or until tender.
Step 2
Preheat the oven to 400°F (200°C) and lightly grease a baking tray.
Step 3
Cube the tofu, sweet potatoes, and avocado.
Step 4
Toss the tofu and sweet potatoes with the olive oil, then spread them evenly over the prepared baking tray.
Step 5
Bake for 15–18 minutes, or until golden brown.
Step 6
Reduce the oven temperature to 375°F (190°C). Add the cooked quinoa to the tray during the last 3 minutes of roasting.
Step 7
Remove the tray from the oven and assemble the roasted tofu, sweet potatoes, quinoa, spinach, and avocado into serving bowls.
Step 8
Season with Creole or za’atar seasoning and add salt to taste.
Step 9
Serve with an oil-free vinaigrette or your favorite salad dressing. This recipe delivers a nutrient-packed meal with comforting sweetness and plenty of plant-based protein.
