Ingredients
- 1 onion, chopped
- 1 can white beans
- 4 medium tomatoes, chopped
- 1–2 tbsp seasoning of your choice
- 2 tsp olive oil
- 3 cups water
- 1 tsp salt
- 2 cloves garlic, minced
- 1 tsp cayenne pepper or hot paprika (to taste)
- 1 yellow bell pepper, diced
- 1 cup bean sprouts
- 1 block (8 oz) tofu, diced
- 2 cups cooked quinoa
Instructions
Step 1
Chop the onion, tomatoes, and yellow bell pepper. Dice the tofu into small cubes.
Step 2
Heat the olive oil in a pan over medium heat. Sauté the onion and garlic for about 5 minutes, until softened.

Add the diced bell pepper, tofu, and white beans to the pan. Cook for another 5 minutes, stirring occasionally.
Step 4
Stir in your preferred seasoning, cayenne pepper or hot paprika, bean sprouts, and salt. Mix everything together well.

Pour in the water, cover the pan, and simmer for about 15 minutes, stirring occasionally.
Step 6
