Ingredients

  • 1 onion, chopped
  • 1 can white beans
  • 4 medium tomatoes, chopped
  • 1–2 tbsp seasoning of your choice
  • 2 tsp olive oil
  • 3 cups water
  • 1 tsp salt
  • 2 cloves garlic, minced
  • 1 tsp cayenne pepper or hot paprika (to taste)
  • 1 yellow bell pepper, diced
  • 1 cup bean sprouts
  • 1 block (8 oz) tofu, diced
  • 2 cups cooked quinoa

Instructions

Step 1

Chop the onion, tomatoes, and yellow bell pepper. Dice the tofu into small cubes.

Step 2

Heat the olive oil in a pan over medium heat. Sauté the onion and garlic for about 5 minutes, until softened.

Step 3

Add the diced bell pepper, tofu, and white beans to the pan. Cook for another 5 minutes, stirring occasionally.

Step 4

Stir in your preferred seasoning, cayenne pepper or hot paprika, bean sprouts, and salt. Mix everything together well.

Step 5

Pour in the water, cover the pan, and simmer for about 15 minutes, stirring occasionally.

Step 6

Serve hot over cooked quinoa and garnish with chopped parsley. Give this traditional-style stew your own twist while keeping it hearty, warming, and protein-rich. Tip: Adjust the amount of chili powder or cayenne pepper if you prefer extra heat.
